Scottish researchers report vegetarians have up to 12 times more salicylic acid in their blood than those who eat meat and fish. They say this may explain why vegetarians suffer less heart disease and bowel cancer. Salicylic acid, the active ingredient in aspirin, is found naturally in fruits and vegetables.

Dr. John Paterson, a chemical pathologist at the Dumfries and Galloway Royal Infirmary in Scotland, is quoted in a Reuters news report, "Studies have shown that if you eat fruits and vegetables you have a lower risk of heart disease, strokes and cancer. Part of the reason to explain that lower risk could be salicylic acid."  Dr. Paterson also explained that there may be other compounds in fruits and vegetables that we cannot measure, which are also protecting us from disease.

According to the researchers, the salicylic acid found in fruits and vegetables reduces inflammation, a major component of cardiovascular and bowel disease.  Even low levels of salicylic acid can interfere with enzymes that increase inflammation.

In addition to fruits and vegetables, salicylic acid can be found in herbs and spices.

At My Mother's Knee

...and the greatest of these is love.

   We all have stories, some humorous, some poignant, of lessons learned at our mothers' knees.  But the most unexpected lessons can be the most profound.
   Things change; life changes.  Relationships, even those we count on to remain static throughout our lifetimes, change with time as well.  One of the most dramatic is the changing role of parent and child as the parent ages.  All through our youth and young adulthood, we take for granted our parents will always be there, with their love and wisdom.  But when the parent becomes elderly and the child becomes care-giver, roles are reversed and emotionally confusing.
   I am fortunate to still have my 84-year-old mother.  She has weathered the storms of various cancers, small strokes, and , most recently, shingles with related encephalitis.  But she is strong and resilient, outliving even the most optimistic doctors' prognoses.  This last physical battle left her needing 'round the clock nursing care, but she still continues to "bounce back."  Each attack leaves her with a stronger sense of her Christian faith, and a closer relationship with the Lord.  Of course, we try to provide her with a good diet and a plethora of natural food supplements and herbs (our AIM membership has come in really handy!).  But there is more at work here - it's the spiritual element.
   A couple of weeks ago, I went into my mother's room to take my turn at "sitting" with her (Clarence and I take one of the three daily nursing shifts).  The problems of life were weighing heavily on me that day.  Seeing the worry etched on my face, she took my hand and pulled me down beside her.  "Honey," she said, in that familiar, soothing tone, "Whatever it is, it's not worth worrying about.  You have a wonderful life - a great husband and family who love you, and a good home."
   I'm ashamed to admit that, for a brief moment, I was annoyed.  After all, it was partly about her that I was worried!  We were juggling her finances to fund in-home care, and planning a mutually beneficial but difficult move for all of us, to help us care for her.  But as I looked at her contented smile and the compassion in her voice, I realized she was reprising her role as my mother.  And she was right!  Nothing was worth letting worry steal away even a moment of precious life!
   I thought about Martha in the Bible.  She was so worried about daily affairs of life, she nearly missed out on life's greatest blessing - sitting at the feet of the Master!  And she had thought her sister, Mary, was the one with the wrong attitude - as she enjoyed the teachings of Jesus, leaving all the "work" to Martha.
   I always thought I understood that Bible story.  But I now realized I was being a "Martha."  I vowed in my heart to no longer let worry steal away the "little" blessings of life.  When one is worried, she misses so much of the sweetness life offers - smiles, humorous situations; the love of family, friends, children, and pets; the beauty of creation; and the sweet solitude of a quiet moment.
   "Mom, you're right!"  I gave her a grateful hug.
   "One more thing," she ordered.  "You know all those things you're always reading and writing about?" (referring to health and and nutrition issues).  Well they are very important and I'm glad you're doing it, but I want you to tell your readers something for me [that's you!].  "All of that is good, but love is more important.  I wouldn't be here if it weren't for love.  Promise me you'll tell them that."
   I'm keeping my promise, Mom.
