SUMMER IS COMING
-------------------------------
Whew!  We're getting a preview of hot summer weather here in California's Wine Country.  This brings to mind all things summer:  vacations, swimming, cook-outs, picnics, long days, warm nights, farmers' markets, cool summertime recipes, etc. - Lots to look forward to!

Mom Was Right About Broccoli

Mom was right when she said, "Eat your broccoli - it's good for you."  But even Mom didn't know how good.  According to a May 28, 2002 Associated Press story:

"Broccoli and broccoli sprouts contain a chemical that kills the bacteria responsible for most stomach cancer."
We've known of the health benefits of eating broccoli and other cruciferous vegetables for years.  But this recent news, coming from the Johns Hopkins University School of Medicine, is astounding.

In laboratory tests, the chemical, sulforaphane (found in broccoli), killed helicobacter pylori, the bacteria which is responsible for stomach ulcers, as well as fatal forms of stomach cancer.  [Oh, the power of broccoli!]

Eating Meat Tied to Cancer Risk

According to an MSNBC news piece by Karen Collins, R.D., [http://www.msnbc.com/news/737587.asp]

"The journal Lung Cancer recently reported that women who ate the most red meat were more than three times as likely to develop lung cancer as those who ate the least. Earlier, in the respected Nurses Health Study, those who ate red meat most often were 2.5 times more likely to develop colorectal cancer than those who ate it least often."
These statistics are staggering.  A number of factors play into meat's cancer risk.

One component in the link between meat eating and cancer is the type of fat meat contains.  According to the MSNBC article, saturated fat has been found to be a "'promoter' that helps damaged cells develop into cancer."  For this reason, many people have switched from eating beef and pork to less saturated fat laden chicken, poultry, and fish.  But other components come into play.

Cooking meat, poultry, or seafood at high temperatures creates carcinogens called heterocyclic amines (HCAs).  In fact, a recent study found that Americans get more HCAs from chicken than they do from beef!

Not all people are equally susceptible to HCAs.  HCAs cannot bind to cells' DNA and start the cancer process until they are activated by body enzymes.  And some people have faster activating enzymes than others.  This may account for some of the genetic predisposition we see in cancer sufferers.

Smoking stimulates the body's production of the activation enzymes, making smokers more susceptible to cancer causing HCAs.  This may explain, in part, why smokers are more prone to cancer in general - not just lung cancer.

On the other hand, natural phytochemicals in cruciferous vegetables alter cancer-related enzymes, reducing the damage caused by carcinogens.

Evidence of the health benefits of a vegetarian diet continues to grow!

Green Tea and Weight Loss

According to a WebMD Medical News article by L.A. McKeown [http://my.webmd.com/content/article/1728.55927]:

"A new study in the March [2000] issue of the International Journal of Obesity concludes that green tea extract increases the burning of calories and fat needed to lose weight."
Green tea has also been reported to have anti-cancer properties and antioxidants, which help prevent heart disease.

Green tea extract reportedly increases thermogenesis, the generation of body heat which aids the metabolization of food.

We enjoy watching "The Doctor and the Word," with Reginald Cherry, MD, and his wife Linda, on TBN.

This past Saturday's program had some interesting healthy tips we would like to pass along to you.

Cinnamon and Peppermint
----------------------------------
Cinnamon enhances digestion.  It can also help with diabetes control, as cinnamon enhances the activity of insulin.

Peppermint also enhances digestion.  It relaxes the GI tract, helping the absorption of food in the digestive process.

GI Tract Health

As you begin eating a healthier diet, you will notice many benefits, as you achieve a stronger body and mind.  You may also notice something else, which probably isn't so welcomed - gas and bloating.  Dr. Cherry explains.  Your healthier diet has more complex carbohydrates than did your previous diet, filled with processed foods.  As "good" bacteria work on these complex carbohydrates in your colon, there are certain byproducts produced (i.e. flatulence or "gas").  This may be "normal" but it probably does no good for your romantic life!  Dr. Cherry recommends a product called Beano (tm) for this problem.  But take heart - as your body's digestive tract gets used to your new way of eating, things tend to calm down.  [I'm tempted to say, "Until then, just toot a happy tune!"  But that wouldn't be dignified, so I won't say it.]

Dr. Cherry also cautions that when you take an antibiotic, it kills all the bacteria in the GI tract lining - "good" and "bad."  The good bacteria must be replaced, as it supports immune system function as well as the absorption of nutrients in the GI tract.

It's Not a Gas: More ideas on preventing gas and bloating.

Beans and rice not so nice.
Proteins and grains or starches need different gastric juices and digestion times in order to properly break down.  Eat them separately so they won't "fight" in your gut and  cause gas.

Sprouting a plan.
Sprouting grains and especially beans before cooking can make them much easier to digest, even if you do eat them together.  Even just soaking beans for an extra ten to twelve hours and then draining can cut down phenomenally on the unwanted results.
